 note = {農業に関連した所得の向上や地域の雇用創出につながる取り組みの1つに農家レストランがある。農家レストランは，地元農産物を使用した料理の提供などにより，消費者に農業を身近に感じてもらえる場である一方，高い運営ノウハウが求められる。本稿では，農村部ではなく都市近郊に立地する農家レストランの事例分析から，その成功要因と今後の課題を析出し，都市近郊の農家レストランの長期的な経営維持に必要な要素および発展可能性に対する提言を行った。本事例の成功要因としては，第一に料理や店内の雰囲気，農業関連イベント等の様々な点で競合に打ち勝つための「独自性」を構築していること，第二に経営者が従業員と経営理念や経験を共有し，店全体としてモチベーションを維持させていることが挙げられる。また，農村部と都市近郊の農家レストランの外部環境の違いから，都市近郊の農家レストランの長期的な経営維持には，多面的機能の発揮による生産者・消費者との信頼関係の醸成が必要であると指摘した。加えて，都市近郊の農家レストランの発展には農家レストランを核としたコミュニティの存在が重要であると結論づけた。, Farm restaurants are part of the efforts to raise agricultural income and create local employment.  These restaurants prepare dishes using local agricultural products, making consumers more appreciative of agriculture.  However, operating farm restaurants requires high managerial know-how.  This study identifies the success factors and prospective challenges by analyzing the case of a farm restaurant located in a suburban instead of rural area.  Further, it discusses the factors and potentialities necessary for its long-term development.  The success factors derived from the case are as follows : 1) creating authenticity to survive competition in various aspects such as quality of food prepared, ambience, and agricultural-related events and 2) sustaining overall motivation by sharing management philosophy and experience with employees.  The study also highlights that it is necessary for the sustainable management of farm restaurants in the suburbs to build mutual trust with local producers and consumers by fulfilling their multiple functions.
